Stuffed mushrooms are a favorite dim sum dish that’s also easy to make at home. You can mix and match several types of mushrooms (both dried and fresh) and fillings (pork and shrimp, for example) to create many different flavor combinations.
For a simple recipe, this dish packs a lot of complex flavor. Use Chinese black mushrooms, otherwise known as shiitake mushrooms, which have a rich, earthy profile. They pair really with the savory pork and crunchy water chestnuts.
Prepare these stuffed mushrooms as part of your dim sum meal or pair with white rice for a light dinner. In the latter case, assume 6-8 mushrooms per person for a full portion.

Stuffed Chinese Mushrooms Recipe
Makes: 20 | Prep Time: 45 Minutes | Cook Time: 30 Minutes
Adapted From: Dim Sum Made Easy
Ingredients
20 dried Chinese mushrooms
1/4 pound ground pork
3-5 fresh or canned water chestnuts, finely chopped
1/2 tablespoon dark soy sauce
1/2 tablespoon Shaoxing rice wine
1/2 teaspoon tapioca starch
1/4 teaspoon sugar
20 small Chinese parsley leaves
2 tablespoons of cooking oil
3 tablespoons oyster sauce
Directions
1. Soak the mushrooms in hot water for 30 minutes until soft. Drain, reserving 3/4 cup of the strained liquid, and discard the mushroom stems.
2. Combine the pork, water chestnuts, soy sauce, rice wine, tapioca starch and sugar in a bowl. Mix thoroughly.
3. Fill each mushroom with filling, smoothing the top flat with a knife. Place a parsley leaf on top of each mushroom.
4. Heat the cooking oil in a wok over high heat, then reduce to medium. Arrange the mushrooms stuffing side up in the wok and cook until they are browned. Mix the reserved mushroom water and oyster sauce, add to the wok and cover. Reduce the heat to low and simmer for 20 minutes, basting frequently, until the filling is cooked through.
5. Arrange the mushrooms on a serving platter and dress with the sauce. Serve immediately.
